Kiepenkerl Summer Purslane

Summer Purslane (Portulaca oleracea ssp. Sativa) is an old cultural and medicinal plant that came to Europe with the crusaders from Southeast Europe, Asia Minor, Egypt and Iran. Nevertheless, it is still a delicate rarity. The pleasantly nutty slightly sour-tasting leafy vegetables with fleshy, succulent leaves develop quickly and easily outdoors and can also withstand drought. It brings high returns in a short time. The leaves contain many vitamins and minerals such as iron, and cholesterol lowering omega-3 fatty acids that are normally only found in seafood.

The leaves can be cooked like spinach and served with meat and fish. They are also great on bread with cottage cheese or a savory salad.
